It eats across four days — Sunday, Wednesday, every day, and once a month by barter. And across five cemita stalls, all within six blocks of each other in central San Pedro Cholula. This page puts that together, in Spanish and English, plus one cemita stall I have eaten at and signed with my name.
This is not another list of restaurants in Cholula. It is what someone who lives here recommends, with a source on every line. Four things:
The market cycle. The Wednesday and Sunday tianguis at Calle 3 Norte 2607. Mercado Cosme del Razo every day on Calle 5 Norte. The monthly Tianguis de Trueque — no money, recognised as Intangible Cultural Heritage of Puebla. No other site, English or Spanish, has assembled this calendar in one place.
The dispersed cemita culture. Cemitas Mary, Cemitas Lupita, Mariscos Y Cemitas Mary, Cemitas La Tradición — four houses inside six blocks of central San Pedro Cholula. Puebla city has a single cathedral of the cemita — El Mercado de las Cemitas on 21 Oriente. Cholula has them spread out. That structural difference is the point, and nobody else names it.
The other places. Pozolerías, taquerías, fondas that locals keep returning to without anyone paying them to recommend them. Each one with its address, its source, and its price when one exists. Anything that lacks a source stays off the page until one appears.
The stall I vouch for. Cemitas Mary, a puesto inside the Mercado Municipal San Pedro Cholula. It is the only place on this page where I can say “I have eaten there” without lying to you. The rest is honest research with sources cited. The two are visually distinguishable on every card — the vouched one carries my name, the researched ones carry their source.
Cholula eats on a cycle. If you know when each one runs, the town meets you differently. What follows is the real calendar of tianguis and markets in Cholula proper — the one no English guide has assembled and that no Spanish blog has put in one place. On Xixitla: the founder has said “I visit the Xixitla market often.” What the research found is that Santa María Xixitla is a barrio of San Pedro Cholula (anchored on its 17th-century church at C. 5 Sur, CP 72762), not a named market with a published day. The tianguis de San Pedro Cholula at Calle 3 Nte 2607 is the one with documented day and hours; the “Xixitla market” reference stays as the founder's personal sighting until he clarifies. Of the 19 Cholula entries in the research file, these twelve pass the filter. The first one is vouched by me — the other eleven are what the research turned up, each with its source. The seven flagged “pending verification” appear on the page because Cholula has them in its data file, but founder confirmation or a second source is still missing before they get a real recommendation.

On scope: Cholula is Cholula — San Pedro Cholula and San Andrés Cholula. This page does not cover food in Puebla city or Mexico City. Each of those cities has its own guides, and the truth is Eater, Time Out, and MICHELIN already cover Puebla city well enough. Cholula they do not — and that is why this page exists.
On drivers: the drivers section lives here as a promise, not a service. When it appears, it will be with a name, a city, and the reason I vouch for them. Until then, no card, no form, no stock photo with a “coming soon” overlay. That already happened once and will not happen again.
