I run this site. My name goes on every recommendation. If a restaurant on this page turns out to be a tourist trap, or a driver no-shows, you have my phone number. That is the entire structure.

Who runs this

I am [FOUNDER NAME]. I have lived in [REGION — San Pedro Cholula / San Andrés Cholula / Mexico City] for [YEARS]. I eat at the restaurants on this page; I ride with the drivers on this page; I am the only person whose name is on every line.

I am not a food critic. I am not a tour guide. I am not a driver. I am a person who lives here and who, year by year, has been lucky enough to find the places he keeps going back to. And to find, by trial and error, the people whose car I would put my own family into.

Why this site exists

Because the alternatives are wrong. TripAdvisor, Yelp, Google Maps, Eater, Time Out, and now the AI answer engines all produce the same product: a paid or algorithmic summary of crowd-sourced signals, none of which reflect a single human being willing to put their name on the recommendation. The writer has not sat at the table. Sometimes the writer has not been to the city.

And for Cholula specifically: no guide in English or in Spanish has assembled the market cycle, the dispersed cemita culture, and one stall signed by someone who lives here. That is the opportunity, and that is why this page exists.

Two decisions are made on every trip, and most guides only help with one of them: where to eat. We help with both — the eating decision, which is Cholula, and the moving-around decision, which is Puebla + Cholula + Mexico City.

The rules

Four rules hold the site together. They are not negotiable.

Restaurants do not pay to be here. No retainer, no sponsored post, no “preferred partner” tag, no link-buy. If a restaurant pays, it gets a normal review on its merits or no review at all. The vouching is the vouching.

Drivers are decoupled from restaurants in the editorial voice. A food review never links to a driver. A driver page never ranks restaurants. The two halves of the business do not bleed into each other; that separation is the firewall.

The commercial arrangement with drivers is disclosed on the page when it exists. Until the drivers page is published, there is no commercial arrangement to disclose. When it is published, the disclosure appears at the bottom of the page, not buried.

Vouched and researched are not mixed. Cemitas Mary is the only place on this page where the founder signs with his name. The other eleven are honest research with cited sources. The two are visually distinguishable on every card — not a footnote asterisk, a label where it has to be.

Names, hours, prices, phone numbers, and reviews are not invented. If the source did not expose one, the row tells you so instead of inventing a number. This rule applies equally to restaurants and drivers.

The scope

The food section covers Cholula — San Pedro Cholula and San Andrés Cholula. It does not cover food in Puebla city or Mexico City. Each of those cities has its own guides, and the truth is Eater, Time Out, and MICHELIN already cover Puebla city well enough. Cholula they do not — and that is why this page exists.

The drivers section covers Puebla, Cholula, and Mexico City, because a driver takes you between cities and a restaurant does not. The two layers carry different scope rules on purpose.

What this site is not:

Not a Puebla city guide — that is Eater, Time Out, and MICHELIN. Not a Mexico City guide — that is the rest of the internet. Not a TripAdvisor substitute. Not an influencer affiliate hub. Not a restaurant-marketing retainer disguised as journalism. Not an AI summary of other people's reviews.

Vouched and researched

Of the 19 Cholula entries in the research file, this page publishes 12. The first — Cemitas Mary — is vouched by me with my name. The other eleven are what the research turned up, each with its source on the card.

The seven flagged “pending verification” are on the page because Cholula has them in its data file, but founder confirmation or a second source is missing before they get the same confidence. The founder can raise or lower each when he reviews this version. The ones that don't survive come off.

If you go to a place on this list and the experience is not what you expected — bad service, food in poor condition, inflated bill — write to me. I log it, I look at it, and if the place has dropped, it comes off. That is the editorial promise, and it applies equally to restaurants and drivers.
